SZÓLÓ is a biodynamic winery inherited by Timea Éless from her grandparents, who grew up in the vineyards, as did their parents. Yet, Timea, born and raised in Tokaj-Hegyalja, Tállya, did not fell in winemaking dynasty. Her grandparents worked with vineyards to cultivate roughly of two hectares, which was supplement income for the family that time. Timea’s mother died when she was child. She spent a lot of time with her grandmother in vineyards not only to plant the grapes, but also approaching them with love.
Later on, the grandparents no longer had the strength to cultivate the grapes and the barrels in the cellar were empty. One vineyard after another was sold, because her grandmother could no longer farm alone.
Timea felt lost and rootless. Since then, she knew that her destiny was to come from the roots of her grandmother vineyards. Timea returned to Tállya in 2010 and after all she had chosen the right path, but not alone, without her husband, it would not have been worked out.
Together with her husband step by step towards a sustainable environment are cultivating SZÓLÓ winery with respect of nature, abstaining from using chemical or synthetic pesticides. They practice ecological cultivation, and since 2015 are organically certified.
After years of practicing organic viticulture, Timea has realized that the way to move forward is the biodynamic practice. From 2019 they produce natural wine with 0 added Sulphur. Wines are fermenting in 675-liter ceramic egg and a stainless-steel tank. She was very excited to follow the development of her wines in “egg” when she first used it in 2014. Their grape is biodynamic and Demeter certified since 2021 and winery since 2022.
Continuous development and learning are important aspects to them, which is also true for the historically valuable wine region, Tokaj, because unfortunately she can see that the region is struggling with enormous lags and it is therefore very difficult for us to preserve the value that our grandparents left us.
